Tasty Duchess Potatoes

Ingredients Quantity (For 4 Packs) Quantity (For 100 Packs)
Potatoes 225 gm 5.65 kg
Eggs 1 8
Hot milk 30 ml 475 ml
Butter 15 gm 340 gm
Salt 10 gm 100 gm
White pepper a pinch 15 gm

Methods to Prepare:
  • Peel and boil potatoes till tender.
  • Strain and mash or sieve.
  • Stir the fat into the hot sieved potatoes.
  • Mix well, add beaten egg and milk.
  • Add seasoning.
  • Fill forcing bag and squeeze mixture out on to a greased baking sheet in the shape of roses or pyramids.
  • Brush with beaten egg or melted butter.
  • Bake in a quick oven till brown, at 205 degree Celsius (400 degree Fahrenheit) or Gas mark 6 for 10 minutes.
