Madeleines Cake

| Butter | 115 gm |
| Sugar | 115 gm |
| Refined flour | 115 gm |
| Baking powder | 1/4 tsp |
| Eggs | 2 |
| Dessicated coconut | 55 gm |
| Glace cherries | 30 gm |
| Jam | 30 gm |
Methods to Prepare:
- Mix flour and baking powder together, then with cream butter and sugar
- Then beat eggs and add gradually, beating well all the time
- Fold in sieved flour lightly
- Grease Madeleie moulds and fill them with mixture, then bake in a hot oven for 20 minutes
Putting all together:
- Take out the cakes trim off tops so that cakes stand firm upside down and are of even height
- Cool the cake and brush tops and sides with melted jam, holding cakes on skewers
- Then roll the cake in the coconut, place half a cherry with a little jam on the top and serve.
