Madeleines Cake

Ingredients For 8 Cakes
Butter 115 gm
Sugar 115 gm
Refined flour 115 gm
Baking powder 1/4 tsp
Eggs 2
Dessicated coconut 55 gm
Glace cherries 30 gm
Jam 30 gm

Methods to Prepare:

  • Mix flour and baking powder together, then with cream butter and sugar
  • Then beat eggs and add gradually, beating well all the time
  • Fold in sieved flour lightly
  • Grease Madeleie moulds and fill them with mixture, then bake in a hot oven for 20 minutes

Putting all together:

  • Take out the cakes trim off tops so that cakes stand firm upside down and are of even height
  • Cool the cake and brush tops and sides with melted jam, holding cakes on skewers
  • Then roll the cake in the coconut, place half a cherry with a little jam on the top and serve.
