Madeleines Cake

Ingredients For 8 Cakes
Butter 115 gm
Sugar 115 gm
Refined flour 115 gm
Baking powder 1/4 tsp
Eggs 2
Dessicated coconut 55 gm
Glace cherries 30 gm
Jam 30 gm

Methods to Prepare:

  • Mix flour and baking powder together, then with cream butter and sugar
  • Then beat eggs and add gradually, beating well all the time
  • Fold in sieved flour lightly
  • Grease Madeleie moulds and fill them with mixture, then bake in a hot oven for 20 minutes

Putting all together:

  • Take out the cakes trim off tops so that cakes stand firm upside down and are of even height
  • Cool the cake and brush tops and sides with melted jam, holding cakes on skewers
  • Then roll the cake in the coconut, place half a cherry with a little jam on the top and serve.

Coburg Cakes

Ingredients For 15 Cakes
Refined flour 170 gm
Butter 85 gm
Sugar 85 gm
Egg 2
Soda bicarbonate a pinch
Ginger little
Cinnamon powder 1/4 tsp each
Warm water 1 tbsp
Golden syrup 1 tbsp
All spice powder 1/4 tsp

Methods to Prepare:

  • Sieve dry ingredients together, then cream fat and sugar
  • Beat eggs and add gradually, beating mixture all the time
  • Then mix warm water and golden syrup to that mixture
  • Finally put this mixture into a well greased and floured patty tin and bake at 190 degree Celsius (375 F) for over 20 minute
  • Then take out and its ready to serve

Lettuce Sandwiches

Ingredients Quantity
Hard boiled egg yolks 3
Chilli vinegar to taste
Butter 1 tsp
Crisp lettuce  
Salt to taste to taste
Bread  

How to Prepare:
  • First mash all egg yolks, then season with salt and a little chilli vinegar and mix with butter in to a paste
  • Then spread on thin slices of bread
  • Place a crisp, fresh lettuce leaf between two slices of prepared bread
  • Press together and cut in to a shape with a sharp knife and serve

Cheese And Egg Sandwiches

Ingredients Quantity
Egg (hard-boiled) 1
Grated Cheese 2 tbsp
Butter 1 tbsp
Sugar (optional) 1/2 tsp
Salt and Pepper to taste
Prepared Mustard little
Bread

How to Prepare:

  • Chop hard boiled egg, mix it with cheese, butter and season with salt, pepper and mustard
  • Add half a teaspoon of sugar if you need
  • Spread a thick layer of this mixture between two thin slices of bread
  • Press all together, trim and cut in to triangles and serve
